Strawberry lemon nice cream will be one of your go-to recipes this summer – perfect for when you want to cool down, but not eat that ton of added sugar that most regular ice creams typically consist of. The nice cream is packed with berrylicious strawberry flavor and is super refreshing on a hot day!

4 reasons why nice cream is the best thing ever

  1. It’s really easy to make – only equipment needed is a food processor or a high speed blender (no ice cream maker!).
  2. Ice cream cravings can be met in minutes (provided that frozen fruit is on hand).
  3. The main ingredient is always frozen fruit, which makes nice cream a healthy treat, that most people can enjoy.
  4. Ice cream!!! I mean, right?

This easy-to-make 3 ingredient strawberry lemon nice cream is based on frozen strawberries (shocking, I know). It doesn’t contain bananas, which most nice creams typically do. The things is, you don’t need to go bananas to create a delectable and velvety nice cream. In this recipe I use full fat coconut milk, but avocado is also a really good substitute for bananas when a creamy texture and rich mouthfeel is wanted.

The beauty of most nice cream recipes are, that they’re very adaptable.

In this case, if you don’t have frozen strawberries (but still want to get yo’ healthy treat on) you can use these frozen fruits/berries instead:

  • blueberry
  • raspberry (omit the lemon juice and definitely adjust sweetness with some maple syrup or date sweetener)
  • pineapple (use lime juice and zest instead of lemon or omit altogether)
  • mango (same as with pineapple)
  • peach
  • melon (all types work)

Strawberry lemon nice cream

This 3 ingredient strawberry lemon nice cream will be a summer favorite – perfect for when you want to cool down, but not eat that ton of added sugar that most regular ice creams typically consist of.

Servings 2

Ingredients

  • 1 lb / 450 g frozen strawberries
  • ½ C / 125 ml full fat coconut milk
  • Juice of ½ big lemon
  • 1-2 tsp organic lemon zest, finely grated
  • Maple syrup to taste (optional)
  • 1 pinch vanilla powder or vanilla extract (optional)
  • 1 pinch fine pink Himalayan salt or sea salt
  • Crunchy toppings (optional) – I used freeze dried strawberries, cacao nibs and chopped toasted hazelnuts

Instructions

  1. Combine all ingredients (except toppings) in a food processor or high speed blender and blend into a smooth and creamy nice cream. This takes a couple of minutes. At first the berries crumble, but keep going. Stop the food processor a couple of times and scrape down the sides. Keep blending until consistency is creamy and smooth.
  2. Taste the nice cream – anything missing? Season to taste.

To serve

  1. Arrange nice cream in bowls and top with delicious crunchy toppings.
  2. Enjoy!

Storage and shelf life

  1. The nice cream is meant to be gobbled up right away, but can be frozen for later too. This will also make the nice cream more scoopable. Defrost 15-20 minutes prior to eating.
