Gluten-free chorizo flavored meatballs

I’ve never met anyone, that didn’t like meatballs. Sure, we can discuss meat or no meat versions, but everybody loves meatballs! Every country in the world seem to have their own national recipe too. I get it, it’s good stuff. These spicy gluten-free chorizo flavored meatballs being no exception!

Easy to make, packed with flavor and just plain ol’ yum!

The meatballs don’t contain chorizo sausage, but they’re seasoned with chili paste, sweet paprika, smoked paprika, coriander, etc. to mimic the delicious flavor of the famous Spanish/Portuguese sausage!

Usually meatballs are made with breadcrumbs, but for a gluten- and grain-free option, I’m using almond flour instead. With it’s neutral taste and semi bread crumb-y, semi flour-y texture, almond flour is perfect for both sweet and savory recipes!

Eat gluten-free chorizo flavored meatballs…

  • on pasta (regular, spaghetti squash, zoodles or any other type of veggie noodle (carrot, celery root, parsnip, butternut squash, etc.)
  • on rice (regular, cauliflower rice or any other type of veggie rice (broccoli, carrot, beet, butternut squash, etc.)
  • on mashed potatoes (…or mashed: sweet potato, cauliflower, broccoli, carrot, celery root, parsnip, winter squash, pumpkin – there’s endless yummy options!)
  • in sandwiches (well hello chorizo meatball sub, just sayin’)
  • in wraps (regular, lettuce and cabbage wraps)
  • on salads
  • as a glorious snack – because you deserve that!

My absolute favorite way to eat these meatballs are with raw spiralized zucchini (zoodles) and green pesto (like this pistachio pesto) – it’s so easy, so flavorful and literally the best meal ever!

Homemade chili paste

The meatballs are made with my homemade chili paste.

It’s a thick, spreadable paste that’s amazing in and with so many things – use it in sandwiches, eat it with your meals, use it in dips and dressings, in these meatballs and 1.000.000 other things. It’s THAT good.

It’s super easy to make too and I highly recommend, that you make some. It’s addictive!

If you don’t have or want to make the chili paste, you can use a mix of tomato paste, olive oil, red chili flakes and maple syrup/date sweetener (…but that’s literally the main ingredients anyway, so maybe just make a batch instead? Please do it! But like, no pressure…).

Gluten-free chorizo flavored meatballs

Try these gluten-free chorizo flavored meatballs on a bowl of pasta, with rice, mashed potatoes or maybe in a meatball sub? There’s so many tasty options!

Servings 4 people

Ingredients

  • 1 1/2 lbs / 680 g ground beef
  • 7 tbsp / 130 g homemade chili paste
  • 1 large egg
  • 1/2 C / 56 g almond flour
  • 2 tsp granulated garlic
  • 2 tsp granulated onion
  • 1 tsp ground sweet paprika
  • 1 tsp ground smoked sweet paprika
  • 1 tsp ground coriander
  • 1 1/2 fine grain pink Himalayan salt or sea salt
  • 1/2 tsp fine ground black pepper
  • Ghee or extra virgin olive oil

Instructions

  1. In a bowl, mix together ground beef, homemade chili paste and egg.
  2. Add almond flour and spices and mix thoroughly. If the mixture seems to dry, add an additional egg – if it seems to wet, add more almond flour (1 tbsp at a time). Usually the mixture is perfect as is though.
  3. Cover the bowl and place in the fridge for 30-60 minutes (optional, but makes the mixture firmer).
  4. With damp or lightly oiled hands (use olive oil), roll about 1 1/2 tbsp meat mixture into meatballs.
  5. Cook meatballs in plenty of ghee or olive oil in a pan or skillet.

Storage and shelf life

  1. The meatballs store well in the fridge for 4-5 days and freeze very well too – perfect for your next round of food prep!
